Roasted Onion
Bacon & Apple Stuffing

Ingredients

Preheat oven to 400
4 Large Onions (Peeled)
2 Apples (Peeled & Diced)
_ lbs. Bacon (Diced)
1 _ Cup Cubed White Bread
1 Teaspoon Butter (Melted)
1 Tablespoon Minced Fresh Sage (Optional)
2 Tablespoons Vinegar (Preferably Balsamic)
Salt & Pepper

Procedure

  • Trim onion bottoms, so that the onions sit flat. Cut tops of onions off _ inch from top. Place back on onions and secure with a toothpick.
  • Place onions in a roasting pan and sprinkle with salt & pepper, melted butter and vinegar.
  • Roast in 400 oven for approximately 1 hour, until onion is soft. Remove from oven & let cool.
  • Remove top from onion and scoop out center.
  • Mince cooked onion centers & set aside.
  • In a sauté pan large enough to hold all ingredients, sauté diced bacon in one teaspoon of butter until well browned.
  • Add minced onion, diced apples, cubed bread & sage (optional), season with salt & pepper & remove from heat.
  • Spoon stuffing into onions and replace tops.
  • Return to oven and heat 20 minutes until onions are heated through.
  • Serve.
