The Food: The menu at X2O under the direction of Peter X. Kelly will showcase the contemporary American cuisine that the Xaviars Restaurant Group has been heralded for. This style of cooking incorporates classic French technique with Italian and Spanish influences and Asian embellishments to create a wholly original cuisine unique to the Hudson Valley . We will utilize local ingredients grown and raised specifically for us by small farmers throughout the Hudson Valley and beyond. The dining room menu is where you will find the synthesis of all we have learned in our nearly 3 decades of providing hospitality in the Hudson Valley . The breadth of the menu will allow guests the luxury of being able to choose from a classically prepared terrine of H.V. duckling with pistachios & truffle or a spice crusted Japanese Hamachi with miso dressing as a first course. Entrees at X2O will offer guests an opportunity to sample a broad spectrum of dishes that fuse together the seasons bounty with pristine seafood, locally raised game birds and pork, lamb and beef that have been raised to exacting standards.
“The Dylan at X2O” is our lounge area where guests can drop in to view a sunset, have a cocktail or to sit at our “Sushiesque Bar” and peek at our state of the art open kitchen. Guests at the Dylan will have their choice to order from our full dinner and dessert menus or to order from the playful Dylan menu such items as an Alsatian Tarte Flambe, grilled Kobe Hot Dog with romesco or a shiso & yuzu panna cotta with sake cured uni.
The Wine: The Xaviars Restaurant group is proud to have been recognized and awarded for the wine programs at all of our restaurants. The Wine program at X2O begins with our display cellar built at the entrance to the dinning room. The cellar is temperature and humidity controlled and guests may view the collection on their way to the dining room. Custom built cabinetry along the entrance corridor provides additional storage for our wine program. The list is formulated in a manageable size showcasing more than 250 wines chosen for their affinity for pairing with our contemporary cuisine. The list represents some of the worlds leading vintners and highlights the most important viticultural areas in both the new world and old world. Both vertical depth and horizontal selection are hallmarks of this wine list. Our wine by the glass program will allow guests to sample wines in a range of styles, varietals and price points. The wine program under the direction of Bill Ratner whom has been the wine director for the Xaviars Restaurant Group for more than 15 years will offer guests, whether novice or connoisseur the appropriate wine at an appropriate price.
The Art: We have commissioned Jon Beerman one of the most renowned Hudson River Landscape artists working today to create the artwork that will hang at X2O Xaviars on the Hudson . John is represented by the Tibor De Nagy Gallery at 724 Fifth Avenue , New York , NY .
Landscape artist John Beerman, a North Carolina native, moved to New York 's Hudson River Valley region after graduating from the Rhode Island School of Design in 1982. Beerman has been painting the light on the Hudson River since then and is now considered to be one of the masters of the twenty-first century luminist landscape painters of America .
Beerman's paintings and prints are included in the permanent collections of major museums around the country, including, The Metropolitan Museum of Art, The Brooklyn Museum, The Houston Museum of Fine Art, The Cleveland Museum and the North Carolina Governor's Mansion and The North Carolina Museum of Fine Art. In addition, his works can be found in many private and corporate collections such as Johnson & Johnson, Metropolitan Life Insurance and Readers Digest.
In 2004, Governor Pataki commissioned Beerman to paint a landscape of Trophy Point for the permanent collection of New York State 's Governor's mansion. Now, John is working on paintings for the new Restaurant, renowned chef Peter X. Kelly's X2O Xaviar’s on the Hudson in Yonkers , NY . The paintings are of different views of the Hudson River and at different times of day. Yonkers is being reborn and once again is considered the gateway to the Hudson River Valley . In doing research for this project, John discovered that his namesake and ancestor, John Thorne, was the map maker for Henry Hudson. It is amazing that John Thorne Beerman has been painting the Hudson River for two decades and now realizes he has a personal history and strong connection to this river, going all the way back to Henry Hudson and his map maker.
The Architecture: The City of Yonkers Recreation Pier , the only turn-of-the-century Victorian Pier still in use on the Hudson River was originally built in 1902. This pier has long been considered the crown jewel of the Yonkers waterfront and prior to the building of the Tappan Zee Bridge in 1955 the pier was the launching point of the Yonkers / Alpine ferry which connected Westchester to New Jersey and NYC.
The architectural firm of Highland Associates who recently designed and oversaw the transformation of what was the Otis Elevator factory in Yonkers into what is now the beautiful Yonkers Public Library in downtown Yonkers was chosen to design both the public and private spaces within the Yonkers Pier. The first floor which will provide access to the soon to launch commuter ferry service to Manhattan’s Battery Park will remain public space where visitors can sit and enjoy the vistas of the Palisades and the currents of the Hudson River. The second floor and Mezzanine levels of the pier which may be reached either by elevator or graceful staircases have been designed to allow dramatic views of the shore and skylines through floor to ceiling windows. Working with the state historic preservation board and the parks department the design respects the original integrity of the architecture yet incorporates a contemporary feel to the newly designed space.
The Interior Design: The interior design concept of the restaurant spaces is an expression of the dynamic context that resonates from the very undertaking of this project.
The Pier is a steadfast steel and concrete structure with open trusses and decorative ironwork which has been literally suspended over a stunning natural landscape. Creating a restaurant within this structure represents progress for the City and the building, both rich with history. It is a rare space where nature is so exalted within an urban context and where heritage is a catalyst for progress. Thus the interior design is a study of contrasts.
Highland Associate’s Denise Luikart has designed the interiors of the restaurant to reflect a contemporary sensibility while maintaining a warm and engaging atmosphere.
Both urban and natural influences are prevalent. Warm woods and rustic stone are used throughout while gracious lighting hangs delicately amid exposed steel trusses. One is at once engaged to experience the larger space and to discover the details.
The main dining room with its 25 foot vaulted ceiling and wrap around windows offers a sensory experience both beyond the windows and within. It is centered with two plush banquettes that feature opposing seating of oversized armchairs fully upholstered in a linen fabric. The custom designed chairs manufactured in Europe feature a shimmery butter toned fabric on the backs, a chocolate chenille on the seats and dark wood backs with a brushed nickel accent. The table design features customized Villeroy & Boch china, Sambonet flatware and Spiegelau stemware.
The Dylan Lounge and food bar area are vibrant, up-tempo spaces with a sophisticated and playful bent. The Dylan Lounge features an L shaped bar with seating for up to 20 people. The bar top is a honed and aged black granite with a small inlay of glass, a walnut elbow rail, and built in shaded lamps. The custom stainless steel foot rail is an abstraction of the pier’s exterior railing. With a sense of discovery the glass inlay at the bar top reveals a certain “poetry” of emotions and persons which are intertwined with the creation of the pier’s new identity and thus, impart a new sense of “heritage”.
The “sushsi-esque” food bar which looks into the open kitchen is trimmed in bamboo and walnut woods with river stones collected from the shores of the Hudson River adding textural accent. Dramatic red glass bead wallcovering has been chosen for the walls above the food bar giving the appearance of topico caviar. References to water and sky are prevalent among the many glass details and there are eye-catching views of the river and cityscape.
The Team: The Chef de Cuisine will be Will Savarese. Will most recently was the executive chef for the past 5 years at La Cremaillere in Westchester . Prior to that Will worked in some of Manhattans most esteemed restaurants including Le Cirque, La Cote Basque, The River Café and Aureole. Will brings a wealth of knowledge to our kitchens and his classical training will add balance to our menu selections.
The General Manager will be James Phanor. James established himself with the Xaviars Restaurant Group working as a captain for many years at our Garrison Restaurant . His attention to detail and guest relations are remarkable. James most recently worked with the great Swiss chef Gray Kunz at Café Gray at the Time Warner building in NYC. Prior to that James worked the front of the house at New York ’s Gotham Bar & Grill.
The support team for our Yonkers debut will be Ned Kelly our director of service, Daout Celestin Maitre D. Hotel at Xaviars at Piermont, Mark Monteleone general manager Restaurant X, James Kelly executive chef Restaurant X, Kathy Egan Chef de cuisine Xaviars at Piermont, Shannon McFarland our director of office administration and wine director Bill Ratner.
The Hours: X2O Xaviars on the Hudson will serve:
Lunch will be served Tuesday through Friday from 11:30 to 3:00.
Dinner will be served Tuesday through Sunday from 5:30 till 10:00.
Sunday Brunch will be served.
